Brenda Caldwell
Cream Cheese
Pie Filling (I use Cherry or Blueberry, but others work just as well)
Butter or Cooking Spray
2 Slices of Bread (or frozen pancakes, thawed)

Butter or add cooking spray to one side of each slice of bread or pancake and place buttered-side-out in pie iron.  (This results in a beautiful brown surface when cooked and helps keep bread from burning.)  Fill with cream cheese and your favorite fruit pie filling.  Cook on camp stove or in fire until golden brown.  YUM!  Makes a great breakfast treat or evening snack.

Entry #4 Fire Pie Baked Alaska

You will need miniature marshmallows, ice cream (Neopolitan is traditional) and bread (A sweet egg bread or even pound cake slices could be used.) Before hand: cut premium neopolitan ice cream or flavor of choice into 1/2 thick slices smaller than the bread you are going to use.  Turn your freezer up to high to really freeze these squares solid (several hours at least). Or if camping put them on dry ice to really freeze them hard.
Preheat your irons, use cooking spray on irons. Then put your bread on the irons first, place marshmallows on one slice of bread, place your square of ice cream in center on top of marshmallows. Then put more marshmallows on top of the ice cream then the top slice then seal shut. Cook about 20 seconds at a time each side until light brown, check frequently. You are aiming for a cold center but light brown on outside.
then eat and enjoy!
